• Grape varieties: Blend = 85% de Colombard and 15% de Chardonnay • Origin : From the foothills of the Pyrénées mountains (South West France). Côtes de Thongue vineyards. • Vinification: The grapes are pressed directly and ferment at low temperature with maximal protection against oxidation. 40% of the blend has gone through malolactic fermentation. • Soil: Deep clay-limestone and even marly-limestone soil in certain plots with some pockets of sand.
